Sweet Potato Enchiladas

Ingredients
3 large sweet potatoes
1 pound ground turkey
1 chopped onion
4 cloves of garlic
4 peeled steamed carrots
1/4 fresh steamed beet
2 tablespoon cumin
3 tablespoons chili powder
2 teaspoons turmeric
1 cup of favorite salsa
14-ounce can of tomato sauce
1 tablespoon liquid aminos
2 teaspoons salt
2 cups grated sharp cheddar cheese
Instructions
Thinly slice three sweet potatoes lengthways and bake (400 degrees for 15 minutes).
In skillet, cook 1 pound ground turkey with 1 chopped onion until all the water is gone. Add 1 tablespoon cumin and 3 teaspoons chili powder, 2 teaspoons turmeric and 1 cup of favorite salsa.
Sauce: Puree 4 peeled carrots with 1/4 beet, 3 tablespoons liquid aminos (such as Bragg’s) and 2 teaspoons salt with 4 chopped garlic cloves and add to meat mixture. Simmer 20-30 minutes.
Layer with meat sauce, layers of sweet potatoes and thin layer of grated cheddar cheese, ending up with cheese. Bake at 325 degrees for 30 minutes.
