Frittata Muffins

Ingredients:

1 lb bacon
8 oz fresh spinach, chopped
6 eggs, blended
6 oz heavy cream

Directions:

1. Sauté 1 lb bacon with 8 oz fresh spinach
2. Blend 6 eggs with 6 oz heavy cream
3. Combine 1 tbsp bacon/spinach mixture, ¼ egg mixture, and top with shredded cheese into oiled muffin tins
4. Bake at 350 degrees for 30 minutes or until golden brown
